It was called Aztec Gold, I think The Big Match kept it for a few years after
Interesting! Aztec Gold was performed by Silsoe who were Rod Argent (ex-Zombies) and Peter Van Hooke (Van Morrison's Drummer). Silsoe made one other record, also a theme, though rather more forgettable: The Two of Us (Nicholas Lyndhurst).
Argent seemed to be in the habit of doing slow latin-style World Cup themes. In 1978, using the name Rodriques Argentines, he teamed up with Andrew Lloyd Webber AKA San Jose to record Argentine Melody for the BBC.

I think as the show got a little more comedic, they wanted to lighten the mood to make it more family friendly.
The 1st season had some very dark moments, & fleeting comedic moments.
