Pace is like any tool for a footballer, it's only useful if used in the right way. For a defender pace is primarily to get them out of trouble a lot quicker, as a secondary asset it allows them to pin back the opposition winger. You tend to find most (definitely defenders) players who have pace in abundance are not as technically proficient as a player who is not so jet-heeled.
I'd rather have a better player in the sense that they are not afraid of getting a kick and are capable of playing the ball out of defence as opposed to going on a headless run and effectively gaining nothing.
The other thing with pace is that the sprightly ones also need intelligence.
